The Guillemot family has worked Savigny-lès-Beaune vines for eight generations and produces wines with classic Burgundian finesse and balance all while leaving us a reminder of Savigny’s rustic character. Guillemot is one of the quintessential KLWM producers with wines that epitomize the local terroir and emphasize grace and elegance over power and structure. But do not be fooled into thinking that this means they lack aging potential; the Guillemots are very proud of their old wines and thankfully have the foresight to set aside a good supply and follow their wines’ development over the years."
The vines are 15 40 and 60 years old one third of each. Their first vintage was 1999 and it has taken them twenty years to understand the terroir. They want to make this Corton as dense as they can first up and then wait so they give it 50% whole bunches and punch down morning and night. Excellent fresh red purple. There is indeed huge power to this while the nose does not yet show detail except perhaps a certain smokiness. The flavours are on the cusp of red and black fruit with quite fierce acidity behind. This is a densely structured wine for sure and I think the Guillemots have achieved what they set out to do. Ten years patience please.
jmThe 2019 Corton Le Rognet et Corton Grand Cru has also turned out very nicely mingling aromas of cherries berries and plums with hints of woodsmoke and coniferous forest floor. Medium to full-bodied deep and sapid with lively acids superb depth of fruit and refined tannins it's long and penetrating.
